Cinnamon Sugar Donut Holes

Ingredients
  

Donuts:

  • 1 ¼ cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 4 ounces ricotta
  • 4 ounces apple cider unsweetened
  • 3 whole eggs
  • 1 tablespoon vanilla extract

Cinnamon-Sugar Mixture:

  • ¼ cup granulated sugar
  • ½ tablespoon ground cinnamon

Instructions
 

  • Prepare a pot with a neutral frying oil heated to 375°F.
  • Combine all your dry ingredients together including the flour, cinnamon, salt, baking powder, nutmeg and sugar and whisk until combined.
  • Combine all your wet ingredients together and whisk until combined. Pour the wet ingredients into the dry ingredients and whisk until just combined and no more streaks of flour are visible. Be careful not to overmix.
  • Prepare your cinnamon-sugar mixture by pouring your sugar into a medium-sized bowl along with your cinnamon. Mix to combine and set aside.
  • Using a mini ice cream scoop to pick up the donut batter and gently release it into the prepared oil. Cook for about 1-2 minutes each side. I cook about 5 or 6 at a time, because I don't want the oil temperature to go down too much and I don't want to overcrowd the pot.
  • Remove the donuts from the oil and place them on a paper-towel lined plate or on a wire rack. While still hot, place the donuts in the cinnamon-sugar mixture and toss until the donut hole is coated in cinnamon-sugar. Place on a separate plate and enjoy warm!

Notes

Enjoy fresh while warm. 
You can store excess batter in the fridge covered in a container and fry the next day. Just allow the batter to get back up to room temperature first.
